Sun-Dried Tomato Pasta with Chicken and Creamy Mozzarella Sauce


Cook the Pasta: Boil pasta according to package instructions. Drain and set aside.
Sear the Chicken: In a pan, heat olive oil over medium heat. Season chicken with salt, pepper, and Italian seasoning, then cook until golden and fully cooked. Remove and set aside.
Make the Sauce: In the same pan, sauté garlic until fragrant. Add sun-dried tomatoes, heavy cream, and Parmesan. Simmer until the sauce thickens.
Combine: Stir in mozzarella cheese until melted and creamy. Add the cooked chicken and pasta to the sauce, mixing well.
Serve: Garnish with fresh basil and extra Parmesan if desired.
Notes:
For added flavor, toss in spinach or mushrooms!
