Ingredients:
2 pounds carrots (less than ½ inch thick), well scrubbed or peeled
1 pound bacon
¼ cup maple syrup
Directions:
Prepare Carrots: Preheat your oven to 400°F (200°C). Scrub or peel the carrots thoroughly. If the carrots are thick, consider slicing them in half lengthwise to ensure even cooking.
Wrap in Bacon: Wrap each carrot with a strip of bacon, starting at one end and spiraling down to the other. Secure the bacon with toothpicks if needed.
Oven Roasting Option: Arrange the bacon-wrapped carrots on a wire rack placed on a baking sheet. Roast in the preheated oven for 20-30 minutes, or until the bacon is crispy and the carrots are tender. Brush the carrots with maple syrup halfway through cooking to glaze.
Skillet Cooking Option: Alternatively, heat a skillet over medium heat. Add the bacon-wrapped carrots and cook for 20-30 minutes, turning occasionally, until the bacon is crispy and the carrots are tender. Glaze with maple syrup halfway through cooking.
Serve: Remove from the oven or skillet and let the carrots cool slightly before serving. Optionally, mix some Dijon mustard into the maple syrup for an extra kick of flavor before glazing.
