1. In a big skillet, heat the olive oil over medium heat. Toss in the pork roast and brown it by searing it on both sides. The liquids and tastes will be better preserved this way.
After browning the pork roast, place it in a slow cooker. Gently place the sliced onion on top of the roast. (Alternatively, frying the onions before adding them is another option).
3. Combine the apple cider vinegar, soy sauce, honey, dark brown sugar, salt, ground garlic cloves, and crushed red pepper flakes (if using) in a mixing bowl. Stir until a marinade is formed.
4. Place the pork roast and onions in the slow cooker with the marinade. Apply the marinade generously to the roast.
5. Evenly distribute the chopped fresh pineapple pieces around the roast in the slow cooker.
6. Preheat the slow cooker to low heat and cook the pork for 6-8 hours, or high heat for 4-5 hours, until it reaches tenderness. Cover and simmer.
7. If desired, thicken the gravy sauce even more by making a cornstarch slurry and adding it to the slow cooker.
At this point, you have the option of serving it shredded (and using it to create sandwiches) or plain with a rich gravy sauce.
