Red Snapper, Shrimp & Grits with a Cajun Cream Sauce

Prepare the Grits: In a large pot, bring water to a boil and stir in the grits. Reduce heat to low and simmer, stirring occasionally, until the grits are tender, about 20-25 minutes. Stir in the heavy cream, Parmesan cheese, butter, and salt to taste. Keep warm.
Cook the Red Snapper & Shrimp: Season the red snapper fillets and shrimp with Cajun seasoning, salt, and pepper. In a large skillet, heat olive oil and butter over medium heat. Cook the red snapper for 3-4 minutes on each side, or until the fish is flaky and cooked through. Remove from the skillet and set aside. In the same skillet, cook the shrimp for 2-3 minutes on each side until pink and opaque. Set aside with the fish.
Make the Cajun Cream Sauce: In the same skillet, melt the butter and sauté the garlic until fragrant, about 1 minute. Add the chicken broth and bring to a simmer. Stir in the heavy cream and Cajun seasoning, cooking until the sauce thickens slightly, about 5 minutes. Stir in the Parmesan cheese and season with salt and pepper.
Assemble the Dish: Spoon the creamy grits onto a plate, top with a fillet of red snapper and shrimp, and drizzle with the Cajun cream sauce. Serve immediately.
